3 Quick and Easy Weeknight Recipes Your Family Will Love

by: Jasmine Reed

I don’t know about you, but the last thing I want to do, after a long day of work, is spend an hour and a half or more, prepping and cooking dinner. Especially when you consider having to get yourself and a little one(s) bathed and ready for bed, by a decent time. It can be a lot! So, I did some browsing on Pinterest for family-friendly weeknight dinner recipes, and found three that sounded super yummy! Check them out below:

●      Buffalo Chicken Casserole  - If your family is a fan of buffalo chicken dip, you all are going to LOVE this casserole. Total time for this dish (prep and cook time, combined) comes to about 40 minutes. I would adjust the amount of hot sauce, depending on your child’s spice tolerance. Pair it with a side salad and rice, to make it a complete meal!

●      Ground Beef Stuffed Pepper Skillet - This one pan dish saves you on time and dirty dishes. Two things that I’m sure sound like music to your ears. In just 30 mins, you get the same great taste of a traditional stuffed pepper dish! I do think this is an easier way to disguise or make the veggie element seem less intimidating to your child, than the traditional way of making stuffed bell peppers. Switch things up and use tortillas to make wraps out of the dish.

●      Taco Pizza - Pizza is great! Tacos are great! Combining the two into one dish? Even better! The crescent roll pizza crust is the key to this recipe’s simplicity and quickness. You can also use ground turkey, instead of ground beef, if that suits your dietary needs, better. We do it with our regular tacos, all the time, and it’s still just as good. The cooking time is only 10 minutes. Finish off by customizing it with everyone’s desired toppings and voila!

Let us know which one you plan on adding to your dinner menu this week. Bon Appetit! :)
